Thai Noodles with Prawns

Makes: 4-5 servings

300g flat rice-flour noodles

10 prawns

500g been sprouts

3 eggs

1 cake hard tofu

½ cup ground roasted peanuts

1tbsp chopped garlic

1tbsp chopped spring onions

4tsp sugar

½ cup oil

1tbsp imli paste

50g chives (garlic leaves)

2-3 tbsp each of fish sauce (easily available) and lime juice

Chopped red chillies

  1. Soak the noodles in warm water to soften.
  2. Heat half of the oil in a work and sauté garlic, bean sprouts and springs onions.
  3. Add the noodles, fish sauté, lime juice, sugar and imli paste. Quickly fry to prevent sticking, set aside in a plate.
  4. Pour rest of oil into a pan. Fry prawns, tofu and chillies together.
  5. Put the remaining oil into a pan, break the eggs into pan and scramble spreading egg thoroughly. Add the noodles, half the been sprouts and chives.

Mix well.
